RIBBON PAKODA

Hey all ! Today's post is going to be 
about an Indian snack - "ribbon pakoda"..
This snack is made during Diwali and
festive occasions.. It is very crispy and
light snack, that can be made very easily with
few basic ingredients from our pantry :-)
RIBBON PAKODA RECIPE:
Recipe Cuisine : Indain / Recipe category : Snack
Prep time : 15 mins / Cook time : 20 mins
INGREDIENTS:
Rice Flour : 1 cup
Gram flour : 1 cup
Salt : as required
Butter (melted) : 1 tblsp
Water : as required
Hing : 1 pinch
Pepper powder : 3/4 tsp
Oil : As required (for frying & for the dough)
METHOD:
 In a bowl, take rice flour, gram flour, hing, pepper powder, butter& salt.
 Then add a tblsp of hot oil. Slowly add water to this and knead 
the dough.

 Now choose the design of your choice from murukku press.
Assemble the murukku press and fill it with dough as 
shown in the pics below.


 Heat oil in medium flame. Once the oil is hot press the dough and fry it. Once
done the pakoda will float and will be golden brown in colour.
Transfer it to a tray with tissue paper or kitchen towel. Let it
cool down then only it will be crispy & crunchy.


  Enjoy crispy & crunchy ribbon pakoda with tea or coffee :-)
  
NOTES:
* The dough should be soft and firm and not sticky.
If not the pakoda will drink more oil & become soggy
* If the dough is too hard add tsp of oil or butter to make
it soft.
* Oil should be hot & in medium flame throughout
the process.
* Adding pepper powder is optional. Chilly powder can also
be added.

AVAL PAYASAM / POHA KHEER

Hey all ! Here I am today with another
Indian sweet recipe :-) This sweet is very 
easy to make & can be made with simple
ingredients from our pantry and tastes 
yummy too :-) 
AVAL PAYASAM / POHA KHEER RECIPE:
Recipe cuisine: Indian / Recipe category: Dessert
Prep time: 20 mins / cook time: 20 mins
INGREDIENTS:
Aval /Thick Poha : 1/2 cup
Milk : 2 cups
Sugar : 1/2 cup
Cardamom powder : 1 tsp
Cashews : few pcs
Ghee / Butter : 2 tsp
TO GRIND:
Coconut : 2 tblsp
Cashews broken : 10 pcs
Poppy seeds : 1 tsp
METHOD:
Soak poha in water & keep it for 10 mins or till
it becomes very soft. 

 Boil milk in medium to low flame.

 Add cardamom powder & sugar. Mix well.
 Let the milk boil & reduce.
 Now, take the ingredients under "To grind" & grind
it with water. Add this paste to the boiled milk. Let it
cook for few mins. Heat pan with ghee or butter.
 Fry the cashews till golden brown & add it to the milk mixture.
 Now add the soaked poha after draining the water completely.
 Let the poha cook in the milk mixture for 5 mins or till
the mixture becomes thick. Serve it hot or chilled.
 Enjoy yummy & rich aval payasam :-)
NOTES:
* Poha has to be soaked till it becomes soft.
If you mash with ur fingers u should be able to mash it.
* Drain water completely from soaked poha before 
adding to milk mixture. If not the kheer will be watery.
* I used 2% milk. Full cream milk can also be used.
* Increase or decrease sugar as per ur tastes & preference.
* Use fresh or frozen coconut while grinding. Pls do not
use dry coonut powder.
* Instead of fried cashews, almonds or pista & raisins 
can also be used 
* The milk has to reduce to half so that the kheer will
be rich & creamy.
* If the poha absorbs the milk & kheer becomes semi
solid, just add some warm milk & mix well.
* This sweet can served both chilled or hot.

KAJU KATLI / CASHEW FUDGE

Hey all ! I am so excited to post this
popular tasty Indian sweet recipe:-)
"Kaju Katlis" are made of cashews &
taste absolutely delicious.. The specialty
of this sweet is we cannot stop after eating one :-)
I have never tried making kaju katlis at home..
My first attempt & came out real good.. I am
very very happy with the results :-) Lets  enjoy
this diwali with these tasty sweets with our loved ones :-)

KAJU KATLI RECIPE:
Recipe cuisine: Indian / Recipe category: Dessert
Prep time: 20 mins / cook time: 20 mins
INGREDIENTS:
Cashew (powdered) : 1 cup
Sugar : 1/2 cup
Water : 1/4 cup
Milk : 1 tblsp
Ghee / Butter : For greasing.
Food Liquid color (optional): Few drops
Sliced cashews : 2 tblsp
Sliced Almonds : 2 tblsp
METHOD:
1) Grind cashews in a dry mixer till it becomes
as fine powder.

2) Boil sugar in water in medium flame
& check for one string consistency as
shown in pic below. 
 
3) At this stage, add the powdered cashew & mix it
well. Le it cook & boil for 5 mins. It will become
like a thick paste or mixture.  
 
4) Turn off the stove & let it be there for few more mins.
Once it becomes warm, take the mixture in a bowl & knead
it to a smooth dough. The dough will be sticky, apply ghee
or butter before kneading the dough. 
 
5) At this stage, add food liquid colour (optional) & mix it well.
Add sliced cashews / almonds (optional) & mix well.

Enjoy mouthwatering kaju katlis :-) 
 
NOTES:
* Cashews should be powdered finely.
* Sugar should be boiled to one string consistency only.
Please do not over boil the sugar.
* After mixing, the powdered cashews to the sugar syrup,
it will be like a sticky mixture. Its ok, let it become warm &
knead it to a smooth dough.
* Adding food colour, sliced cashews are optional. You can
just make it white colour & cut into diamond shape or square.
* Any shapes can be made as per our choice.
