EGGLESS BANANA WALNUT MUFFIN


Hey all ! Hope you all had a great weekend :-) 
I am back with an eggless baking recipe :-) 
I tried these muffins couple of times and 
came out pretty good..
EGGLESS BANANA WALNUT MUFFIN:
Recipe cuisine: Indian / Recipe category: Dessert
 Prep time: 15 mins / cook time: 25 mins
FOR THE MUFFINS:
Banana (medium sized) : 2 
All purpose flour / Maida :  1 cup
Walnut (chopped) : 1/4 cup
Sugar : 1/2 cup
Oil / Unsalted butter : 1/4 cup
Baking soda : 1/2 tsp
Baking Powder : 1/2 tsp
 vanilla essence : 1/2 tsp
METHOD:
1) Pre heat oven to 375 F or 180 deg C.
Mix well maida, baking powder, baking soda.

2) In another bowl mash peeled bananas & add 
oil / vanilla / sugar. Mix well.

3) Now add the banana mixture to step 1.
Gently mix well without any lumps. 
Add chopped walnuts to this.




4) Now arrange the cupcake trays with paper cups


5) Transfer the batter to paper cups.
Add remaining chopped walnuts on top.
Pls fill up only  3/4th of the cup as it will raise high.





6) Bake for 25 mins or until a toothpick comes out dry.
Check around 20 mins as oven power may vary.


7) Let it cool down for 15 to 20 mins.
Enjoy soft muffins with crunchy walnuts :-)

NOTE:
* Pls do not use raw bananas.
* Ripe bananas will make muffins soft.
* The muffins can be stored for  2 - 3 days.
* Vanilla essence is optional.

MEDHU VADAI / ULUNDHU VADAI

Hey all ! Today's post is going to be about medhu vadai.
 Medhu vadai is a popular south indian breakfast item.
 Also made during festive occasions :-) 
My elder sis taught me some tricks & techniques to make 
crispy vadais with hole :-) So lets begin :-)

MEDHU VADAI / ULUNDHU VADAI RECIPE:

Recipe Cuisine : Indain / Recipe category : Snack
Prep time : 2hrs soak time + 15 mins / Cook time : 20 mins

TO GRIND:
Urad dal (whole without skin) : 1 cup
Red chilly dried :  2 pcs
Ginger : 1 inch pc
Salt : as required
Water : as required

TO MIX:
Green chillies (chopped) - 4 pcs
Curry leaves (chopped) - a spring
Coriander leaves (chopped) - 2 tblsp
Ginger (chopped) - 1 tblsp
Hing : 1 pinch
Black pepper whole: 1 tblsp
Jeera / cumin seeds whole : 1 tblsp

TO FRY:
Oil for frying

METHOD:
Soak urad dal for minimum 2 hours.
 Drain water completely.


Grind it with with the ingredients from 
"TO GRIND" section.
The batter should be thick & not watery.


Now mix the ingredients from "TO MIX" section.




At this stage chopped onions can be added if you want.

Heat oil for frying in medium flame.
Pls follow the steps from pictures below
to make vadais :-)




Once oil is hot, please transfer the vadai & fry 
it till golden brown in medium flame itself.








Enjoy hot vadais with coconut chutney / sambar :-)





NOTES:
* Pls add water little by little while grinding.
* If vadai drinks oil, it means the batter is watery.
* Please add 1 medium sized chopped onions if you want.
* Please fry in medium flame only.

PALAK PARATHA (SPINACH PARATHAS)




Hey all ! Hope you all had a great weekend :-)
I thought of starting this week with a healthy
recipe.. I tried this palak paratha at my friend's
dinner party couple of weeks ago.. Got the recipe
from her..The paratha came out real soft and nice :-)

Palak paratha recipe :
Recipe: Indian / Category: main course
Prep time: 20 mins / cook time : 30 mins

To Grind:
Spinach (boiled) : 2 cups
Salt : as required
Cumin/ jeera powder : 1 tsp
Garam masala powder : 1 tsp

For the dough:
Atta / wheat flour : 2 cups
Salt: as required
Oil/ ghee: 1 tsp + 1/8 cup for cooking paratha

METHOD:
Wash spinach & drain water.
Microwave spinach for 5 mins with pinch of salt.
Drain water keep aside. Let it cool down


Grind the boiled spinach with cumin & garam masala powder.







Now slowly add flour to this mixture.
It will be sticky but it's ok.

Add 1 tsp oil and knead the dough.


Keep it closed for 15 mins.
Then make even round balls.


Dust with flour & roll it.
It will be sticky so keep dusting with flour.




Now heat pan in medium flame.
Transfer the paratha once pan is hot.


Turn the paratha after few mins & apply oil.
Turn again and apply oil (1/4 tsp oil).
Cook both sides till golden brown.





Serve hot parathas with dahi & achar :-)


Note:
* I used olive oil. Ghee or butter can be used
* I used garam masala & jeera powder but it is optional
* Pls don't add water to knead the dough
