TOMATO PANIYARAM

 Hey all ! I am back with a popular South
Indian snack recipe "paniyaram".. I made some
vadas for " vadamalai" and had some leftover
batter.. So, started searching for recipes with
ural dal batter and came across this "Tomato paniyaram"
recipe.. I had to alter the recipe little bit,
but came out really good :-) Lets begin :-)
TOMATO PANIYARAM RECIPE:
Recipe Cuisine : Indain / Recipe category : Snack
Prep time : 15 mins (2 hours soacking)/ Cook time : 20 mins
INGREDIENTS:
FOR THE BATTER:
Rice Flour : 1 & 1/2 cups
Urad dal : 1 /4 cup
Salt : as required
Tomato : 2 (medium sized)
Water : as required
Oil : As required
FOR TEMPERING: 
Oil : As required
Mustard : 1 tsp
Hing : 1 pinch
Curry leaf : 2 tsp
Green chilly : 1 tsp (chopped)
Channa dal & Urad dal : 1 tbsp
Turmeric powder : 1 tsp
Coriander leaf : 2 tsp (chopped)
Mix veg : As required (Optional) - Green peas, carrots & onions.
METHOD:
 Since I had batter from vada, I added water to it & made it more
watery. Actual procedure is to soak the urad dal for 2 hours. 
Drain water completely and then add water & grind it to thin paste.
Soak idli rice separately & grind it to thin paste. 
Ratio is 1 cup idli rice to 1/4 urad dal. Then mix both mixture & 
ferment it for 8 hours. Like we do for idli dosa batter. But I used
rice flour in place of idli rice. That works fine too.
Now, chop tomatoes into wedges & grind it to smooth paste.
Add the tomato paste & rice flour into the urad dal batter.
Mix completely without any lumps. The batter has to be thick.
Add little bit of water if needed.
Now heat pan with oil, let the mustard splutter.
Then add hing, channa dal & urad dal. 
Let the dal turn golden brown.
Now add green chilly, curry leafs. Then add the veggies &
turmeric powder & salt as required. Mix well.
Now prepare the paniyaram pan. Heat it in low flame.
Sprinkle some oil. Check the veggies. 
Once the veggies are cooked, transfer it to the batter.
Mix well. Add salt accordingly.
Mix well. Now using a spoon transfer the batter to the pan.
Sprinkle some oil on top.
Cover it & cook for 10 mins or till the sides turn golden brown &
a tooth pick comes out clear.
Now turn the paniyarams to the other side & cook for another 5 mins.
The entire process should be low to medium flame.
After 5 mins, flip few pcs & will see the other side would have turned 
golden brown too. And you can see the middle portion is cooked as well.
Serve it hot with your favourite chutney or sauce :-)

 NOTES:
* I used rice flour as I already had the batter. 
I have done paniyaram with idli rice too. Not much difference.
* Adding tomato paste is optional. But gives a good taste.
* Adding mix veggies optional too. And any veggie can be used.
* Please fry in medium to low flame only.
If not the outer layer will be cooked & inside will
be raw batter.
