VEGGIE PITA WITH HUMMUS

Hey all ! As I mentioned in my previous
post, hummus with pita bread is my
personal favourite.. To make it more
interesting, we can add veggies or any
stuffing of our choice..We can even use
tortilla wrap or left over chappathi for
this very easy recipe :-)

 VEGGIE PITA WITH HUMMUS RECIPE:
Recipe cuisine: Continental / Recipe category: Snack
Prep time: 15 mins / cook time: 30 secs (toasting pita)

INGREDIENTS:
Hummus : As needed
Pita bread : 1 pc
Cabbage,capsicum, carrot (sliced) : 1/4 cup
Onions (sliced) : 1/4 cup
Chat masala : 1 tsp
Salt : As needed
Coriander (for garnish) : As needed

METHOD:
Slice  cabbage, capsicum, carrot & keep
side.
Slice onions, add chat masala, salt 
as required. Mix well & keep aside.

Microwave the pita bread in fro 10 secs
or toast in tawa for 30 secs.
Now take hummus as much needed & 
spread it evenly on the toasted pita bread.
At this stage, take mix veggie as much as needed and 
place in the middle leaving some space for rolling.
Add sliced onions on top of this.
Now slowly roll the pita making sure the
 stuffing doesn't come out.
Cut the roll into two halves. Garnish it with coriander leaf.
Serve it with your favourite sauce :-)

NOTE:
* Please refer my previous post for how to make hummus.
Alternatively store bought hummus can be used.
* I used store bought pita bread home made pita bread 
can also be used.
* Tortilla wrap or chappathi can also be used.
* Any veggie can be used for stuffing.
* Stuffing can be raw or cooked as well.
* I added chat masala & salt to the chopped 
onions, as it well help to get rid of the raw 
onion smell.
*  I had it with tomato sauce, any sauce can be used.

HOME MADE HUMMUS


 Hey all ! Here I am with another interesting
yet healthy recipe.."Hummus" is one of my
personal favourite :-) This dip can be eaten
on its own or with chips or bread or salad..
This dip is very rich in protein & can be
easily made at home :-) Lets begin :-)
HOME MADE HUMMUS RECIPE:
Recipe cuisine: Continental / Recipe category: Snack
Prep time: 8 hrs soaking time/ cook time: 30 mins
INGREDIENTS:
White chickpeas (Channa): 1 cup
Olive oil : 4 tblsp
White sesame seeds : 2 tblsp
Lemon juice : 4 tblsp
Salt : As needed
Garlic (roasted / boiled) : 2 flake (optional)
METHOD:
Soak the chickpeas over night.
Boil the same till it becomes soft.
Drain & keep the water for later.



Roast the sesame seeds till golden
brown colour. Let it cool down.




Now in a blender, add boiled
chickpeas / roasted sesame seeds /
Olive oil / lemon juice / salt.
At this stage, add garlic if you want.
Grind it till forms a smooth paste.


Enjoy tasty & healthy hummus :-)
(My personal favourite is hummus
with pita bread :-) )

NOTE:
* Soaking chickpeas overnight is
imporatnt. If not it will not be soft.
* Original recipe has garlic in it.
Garlic can either be roasted or
boiled before using.
* Only olive oil gives the best tatse.
Please do not use any other oil.
* The skin of chickpeas can be
removed after boiling (optional)
* Canned chickpeas can also be used.
* While grinding, add little bit of water
from boiled chickpeas. This will make
the dip smooth & tasty :-)
* I have added some chilly flakes &
seasoning on top of the hummus in the
pictures. It  is for decoration purpose &
 optional.

EGGLESS APPLE CINNAMON MUFFINS


Hey all ! I am back with another
 eggless baking recipe :-)
Very simple yet very yummy
muffins.. The aroma of cinnamon
 powder is the highlight of the recipe..
Lets enjoy :-)

EGGLESS APPLE CINNAMON MUFFIN:
Recipe cuisine: Indian / Recipe category: Dessert
 Prep time: 15 mins / cook time: 25 mins

FOR THE MUFFINS:
Apple ( grated) : 1/2 cup
All purpose flour / Maida :  3/4 cup
Almonds (sliced) : 1/4 cup
Sugar : 6 tblsp
Salt : a pinch
Yogurt : 1/4 cup
Oil / Unsalted butter : 1/4 cup
Baking soda : 1/2 tsp
Baking Powder : 3/4 tsp
Vanilla essence : 1/2 tsp
Cinnamon powder : 1 tsp

METHOD:
1) Pre heat oven to 375 F or 180 deg C.
Mix well maida, baking powder, baking soda & cinnamon
 powder.


2) In another bowl mix yogurt & sugar. Once the sugar 
dissolves, add salt,oil & vanilla . Mix well. 

3) Now add the wet mixture to step 1.
Gently mix well without any lumps. 
Add grated apples & mix well. Then
add chopped almonds to this.





4) Now arrange the cupcake trays with paper cups

5) Transfer the batter to paper cups.
Add remaining chopped almonds on top.
Pls fill up only  3/4th of the cup as it will raise high.


6) Bake for 25 mins or until a toothpick comes out dry.
Check around 20 mins as oven power may vary.


7) Let it cool down for 15 to 20 mins.

Enjoy soft muffins with crunchy Almonds :-)



NOTE:
* I peeled the skin of apples & grated the same.
Alternatively, you can blend the apple in blender.
* The muffins can be stored for  2 - 3 days.
* Vanilla essence is optional.
* Instead of almonds, walnuts can be used.
