MICROWAVE PALKOVA / INSTANT PALKOVA

     Hey all ! My first post after delivery :-) 
I wanted to start off with a sweet note - "Palkova"
This is by far the easiest recipe 
I have ever come across..I prepared this for 
Tamil New Year & really came out very good..
The total process took like 10 mins.. 
So here I am to spread the joy :-)
MICROWAVE PALKOVA:
Recipe cuisine: Indian / Recipe category: Dessert
Prep time:5 mins / cook time: 5 mins
INGREDIENTS:
Condensed Milk : 1 Tin
Curd : 2 tblsp
Ghee : 2 tblsp
METHOD:
Gather all the ingredients.Transfer the condensed milk
 to a microwave safe bowl. 
Add the ghee & curd.Mix it very well without t any lumps.

This is how it looks after mixing.
Set the microwave power to high. Microwave for 3 mins.
The mixture will start to rise with bubbles
Take it out & mix it well.
Microwave again for 2 mins with high power level. 
As you can see the pics the sides will start to get dry.
At this stage if the sides dont dry microwave for another 2 mins.
I did only 5 mins in total. Then mix well.
Let it cool down for 5 mins & you will see the mixture would have 
thickened more. All set. Palkova is ready to be served :-)
Enjoy yummy & creamy "Palkova" in minutes :-)

NOTES:
* As per the actual recipe, totally we have to microwave for 7 mins (3+2+2).
I did only 5 mins as I reached the desired consistency.
* You can use upto 1/4 cup ghee as per actual recipe. 
* The mixture will be rise, so have to use a large microwavable bowl.
* The mixture will be slightly runny but after cooling down it will be thick.

PINEPAPPLE KESARI

 Hey all ! Wishing you and your family a 
very happy, healthy & prosperous 
new year 2016 :-) Starting of this year 
with a sweet note.. Kesari is a popular
south indian sweet made with rava or sooji..
Adding pineapple to this gives a nice taste 
and texture to the sweet.. Lets begin :-)
PINEAPPLE KESARI
Recipe cuisine: Indian / Recipe category: Dessert
Prep time:5 mins / cook time: 20 mins
INGREDIENTS:
Rava /Sooji : 1 cup
Sugar : 1 & 3/4 Cup
Water : 2 & 1/2 cups
Pineapple : 1/4 cup
Broken cashews (fried in ghee / butter ) : as needed
Food liquid color (Yellow) : few drops (optional)
METHOD:
Drain the pineapple from can & wash it with water.
(I used canned pineapples, if using fresh pineapples 
pls skip this step). Keep it aside.
 
Dry roast rava till golden brown .
(Add 1/4 cup ghee or butter & roast rava if you want)
Boil water side by side.
Once the water is boiling hot, transfer to the rava &
mix well immediately without any lumps.
Cover the pan with lid & cook it in low flame.
Then add the sugar to this rava mixture & mix well.
The sugar will start to melt & the mixture will become watery.
Add food colour liquid (optional) & mix well.
Now add the chopped pineapples & mix well.
Let it cook in low flame for 2 mins.
Add the fried cashews & mix well again. 
The mixture will start to thicken. Serve it hot :-)
Enjoy sweet & yummy pineapple kesari :-) 
NOTES:
* I used canned pineapples, if using fresh pineapple 
pls clean the outer skin & chop the pineapples into 
small cubes.
* Sugar quantity can be 1 & 1/2 to 2 cups depending on
your taste.
* The mixture will be too watery after adding the sugar
but it will eventually thicken.
* Add 1/4 to 1/2 cup of ghee while roasting the rava (optional).

AVAL PAYASAM / POHA KHEER

Hey all ! Here I am today with another
Indian sweet recipe :-) This sweet is very 
easy to make & can be made with simple
ingredients from our pantry and tastes 
yummy too :-) 
AVAL PAYASAM / POHA KHEER RECIPE:
Recipe cuisine: Indian / Recipe category: Dessert
Prep time: 20 mins / cook time: 20 mins
INGREDIENTS:
Aval /Thick Poha : 1/2 cup
Milk : 2 cups
Sugar : 1/2 cup
Cardamom powder : 1 tsp
Cashews : few pcs
Ghee / Butter : 2 tsp
TO GRIND:
Coconut : 2 tblsp
Cashews broken : 10 pcs
Poppy seeds : 1 tsp
METHOD:
Soak poha in water & keep it for 10 mins or till
it becomes very soft. 

 Boil milk in medium to low flame.

 Add cardamom powder & sugar. Mix well.
 Let the milk boil & reduce.
 Now, take the ingredients under "To grind" & grind
it with water. Add this paste to the boiled milk. Let it
cook for few mins. Heat pan with ghee or butter.
 Fry the cashews till golden brown & add it to the milk mixture.
 Now add the soaked poha after draining the water completely.
 Let the poha cook in the milk mixture for 5 mins or till
the mixture becomes thick. Serve it hot or chilled.
 Enjoy yummy & rich aval payasam :-)
NOTES:
* Poha has to be soaked till it becomes soft.
If you mash with ur fingers u should be able to mash it.
* Drain water completely from soaked poha before 
adding to milk mixture. If not the kheer will be watery.
* I used 2% milk. Full cream milk can also be used.
* Increase or decrease sugar as per ur tastes & preference.
* Use fresh or frozen coconut while grinding. Pls do not
use dry coonut powder.
* Instead of fried cashews, almonds or pista & raisins 
can also be used 
* The milk has to reduce to half so that the kheer will
be rich & creamy.
* If the poha absorbs the milk & kheer becomes semi
solid, just add some warm milk & mix well.
* This sweet can served both chilled or hot.
