EGGLESS CHOCO CHIP CHOCOLATE MUFFINS

Hey all !! Today I have another eggless baking
recipe :-) After I tried banana & vanilla muffins,
I wanted to try chocolate muffins.. Me & my best
friends (S&D) we love anything with chocolate
 flavour..This post is for my  best buds :-)

EGGLESS CHOCO CHIP CHOCOLATE MUFFINS RECIPE:
Recipe cuisine: Indian / Recipe category: Dessert


 Prep time: 15 mins / cook time: 20 mins

FOR THE MUFFINS:

All purpose flour / Maida : 3/4 cups
Coco power : 2 & 1/2 tblsp
Choco chips : 2 tblsp
Sugar : 1/2 cup
Bakng soda : 1/2 tsp
Salt : a pinch
Oil / Butter : 1/4 cup
Water : 1/2 cup
Vanilla essence : 1 tsp
Lemon juice / vinegar : 1 tsp

METHOD:
Pre heat oven 380 F / 190 deg C.
Sieve flour, coco & baking soda.











Mix oil, water, vanilla essence, sugar & salt.
Mix well till sugar & salt dissolves.











Now mix dry ingredients & wet ingredients
without any lumps. Add 1 tblsp of choco chips.

Finally add vinegar and just gently fold it.
Arrange muffin liners in the baking tray.
Fill 3/4th of the muffin liners with batter as
it will raise high. Garnish remaining choco chips.

Bake for 25 mins. Check around 20 mins as
oven power vary.

Enjoy Chocolaty muffins..yummy :-)



NOTE:
*I used olive oil. Veg oil / butter can be used
* After adding vinegar, mix gently. Pls do not
beat with hand mixer.
* Instead of chocochip, walnuts can be used.
* Vanilla essence is optional.
* Muffins taste good next day as the flavours 
come together :)

ALOO PARATHA / POTATO PARATHA

Hey all !! Who likes Aloo paratha ??? :-)
I can see all our hands up :-) My hubby
likes aloo parathas a lot.. but not the 
way I used to make..I grate boiled potatoes
& add wheat flour to it and make parathas 
from that..But my hubby likes the stuffed 
potato type.. My neighbour / friend helped
me with the stuffed aloo paratha recipe..
And it is really good..Now my hubby likes
my parathas :-)  Success :-)

ALOO PARATHA / POTATO PARATHA RECIPE:
Recipe cuisine: Indian / Recipe category: Main Course

 Prep time: 30 mins / cook time: 30 mins
FOR THE DOUGH:
Wheat flour : 2 cups
Water : As required
Salt : As required
Oil : 1 tsp + 1/8 cup for frying parathas

FOR THE STUFFING:
Potatoes / Aloo (boiled) : 2 medium sized
Coriander (chopped) : 1 tblsp
Ginger paste : 1 tsp
Green Chilly paste : 1 tsp
Cumin powder : 2 tsp
Garam masala : 2 tsp
Chat masala : 1/2 tsp
Salt : As required

METHOD:
Take flour in a bowl, add salt & water slowly.
Start to knead the dough and make a smooth dough.
Pls make sure dough is not sticky or not hard.

Now add 1 tsp oil & knead the dough again.
Cover & keep aside in a air tight container for
15 - 20 mins.

In a bowl take boiled potatoes and all ingredients 
under "FOR THE STUFFING". Mix well
by mashing the potatoes without any lumps.

Make even round balls. Now take the dough & 
even round balls. The size of dough balls should be
bigger than the size of stuffing balls.

Now take a dough ball & roll it to form a small disc.
Apply water all over the disc and place potato stuffing
in the middle. Pls start to cover the stuffing with dough
as per the pics below :) Keep the dough stuffed with potato upside down till
you finish stuffing the remaining dough.




Now grab the first dough stuffing & dust it with as much
wheat flour as possible both the sides. Start to roll the 
dough stuffing gently with a rolling pin and make parathas.


Heat pan in medium flame. Once the pan is hot, transfer
the parathas. Start to cook both the sides with 1/2 tsp of oil.
Once parathas turn golden brown colour both the sides, remove it .
Continue the same process for rest of the parathas :)


Serve hot parathas with your favourite sabji / dahi & achar :-)

NOTE:
* The dough should be soft & firm. If it is sticky or hard,
parathas will become hard.
* For the stuffing, please use masala of your choice.
* While rolling the stuffed dough dusting flour is important.
In case if the dough breaks and stuffing comes out, the flour 
will help to patch the same.
* I like to roll the parathas thin, if you want pls roll it a bit thicker.
* For frying paratahs, I used olive oil. Ghee or butter can also
be used.

HOME MADE VEG PIZZA

Hey all ! Here I am back with another baking recipe :-)
 Guess what !! yummmyyy cheeessyyy veg pizza recipe :-)
 I recently baked this pizza for our girls get together and 
all my friends loved it :-) Yup we can bake pizza from
scratch at home..very easy..

HOME MADE VEG PIZZA RECIPE:
Recipe cuisine: Indian / Recipe category: Snack

 Prep time: 2 hr  30 mins / cook time: 20 mins
FOR THE DOUGH:
All purpose flour / Maida : 1 & 1/2 cup
Instant yeast : 1 tsp
Milk : 1/4 cup
Water : 1/4 cup
Oil : 1/8 cup
Salt : 3/4 tsp
Sugar : 1 & 1/2 tsp
FOR THE TOPPING: 
Pasta sauce : 2 tblsp
Pizza blend cheese / Mix cheese  : 3/4 cup
Onions / Capsicum / Baby corn / Olives (Chopped)

METHOD:
Mix well maida & yeast.
Mix milk & water and microwave it for 30 secs.
Dissolve sugar in the milk -water mixture.
Now add this to the flour with yeast.
Then add oil & lastly add salt.












Now knead & make a smooth dough.
Cover it with a clear wrap & keep it in
a warm place.











After 1 & 1/2 hours, the dough would 
have doubled in its size.










Now take the dough in a flat surface & roll it.
Grease pizza pan with oil or butter.
Place the rolled dough on pizza pan.










Keep it in a warm place for half n hour.
The dough will raise again.












Preheat oven to 400 F / 200 deg C.
Now spread pasta sauce gently on the dough.










Then take half of the cheese and spread evenly.









Arrange toppings accordingly.










Now spread the remaining cheese on top.











Bake for 18 - 20 mins or until the pizza crust
turns golden brown. Check around 15 mins as 
oven power may vary.
 Enjoy hot yummmyyy cheessssyyy pizza :-)


Note:
* I used olive oil. Veg oil or sunflower oil can be used.
* Add salt lastly, and not with yeast as it might deactivate
the yeast.
*I used instant yeast, if active dry yeast pls use 1 tblsp.
Active dry yeast must be activated in  warm water with
1 tsp of sugar for 10 mins.
* Toppings can be any veg of your choice.
* It is very important to let the dough raise twice.
* I kept the dough inside oven with lights on so that 
it will be warm.
