EASY WATERMELON PIZZA

Hey all ! I came across this 
very easy& interesting recipe..It takes
 only few mins to prepare it & very
 healthy too :-) No cooking needed.. 
Great for kids who do not like
 to eat fruits and when we have surprise guests :-)
 Try it & you will love it :-)
EASY WATERMELON PIZZA RECIPE:
Recipe cuisine: Continental / Recipe category: Salad
Prep time: 10 mins / cook time: Nil
INGREDIENTS:
Watermelon (Sliced) : 1 pc
Flavoured yogurt : 100gm
Chopped fruits : 1 cup
Chopped dry fruits : 1/4 cup
METHOD:
Take a whole watermelon & cut into half.
Then make a slice from one half as shown below.







Now, take a cup of flavoured yogurt of your choice.
I used blueberry yogurt. Using a knife or spatula,
spread the yogurt on top of the sliced melon evenly.

Take chopped fruits & dry fruits of your choice.
 Place it on the watermelon with yogurt as shown below.



Using a knife, cut into slices like a pizza :-)




Enjoy healthy & yummy watermelon pizza :-)
NOTES:
* Actual recipe was to use cream cheese frosting instead of yogurt.
I changed it to make it healthy :-)
* Any chopped fruits & dry fruits can be used.

EGGLESS MANGO MINI MUFFINS

Hey all ! Here I am with another
eggless baking recipe :-) I came
across this mango cupcake recipe online 
& wanted to try for a while now.. 
Finally did it before mango season ends :-)

EGGLESS MANGO MINI MUFFINS:
Recipe cuisine: Indian / Recipe category: Dessert
Prep time: 15 mins / cook time: 22 mins
INGREDIENTS:
Mago Puree : 3/4 cup
All purpose flour / Maida : 3/4 cup
Sugar : 1/3 cup
Oil / Unsalted butter : 2 tblsp + 2 tsp
Baking soda : 1/4 tsp
Baking Powder : 1 tsp
vanilla essence : 1 tsp
Cardamom powder : 1/2 tsp
Chopped walnuts : 2 tblsp
METHOD:
Preheat oven to 375 F / 180 C.
Peel the skin of mango. Chop finely & grind it
without any lumps.
 


Add sugar. Mix well till sugar dissolves.
Add oil, vanilla essence. Mix well.
In a bowl, take maida,cardamom powder,baking soda
and baking powder. Mix well. Add the mango puree
mixture to the maida mixture.
Slowly mix the dry and wet ingredients as shown in the pics below.
Transfer the batter to paper cups.
Add chopped almonds on top.
Pls fill up only  3/4th of the cup as it will raise high.

Bake for 16 to 20 mins or until a toothpick comes out dry.


Check around 15 mins as oven power may vary.
Let it cool down for 15 to 20 mins.
Enjoy soft yummy mango muffins :-)


NOTE:
* The muffins can be stored for  2 - 3 days.
* Vanilla essence is optional.
* Instead of walnuts, almonds can be used.
* I used olive oil, butter or vegetable oil can be used.
* Baking time is lesser as I used mini muffin tray.
Please bake for 25 to 28 mins if you are using
normal muffin tray.

BADAM MURUKKU / ALMOND MURUKKU


Hey all ! Today's post is going to be about a 
popular south indian snack "muruku" :-)
There are different types of muruku made
with different ingredients but the base ingredient is 
always rice flour.. I made it with almonds..Lets enjoy :-)
BADAM MURUKKU RECIPE:
Recipe Cuisine : Indain / Recipe category : Snack
Prep time : 15 mins / Cook time : 20 mins
INGREDIENTS:
Rice Flour : 1/2  cup
Badam / Almonds : 8 pcs
Salt : as required
Water : as required
Hing : 1 pinch
Jeera / cumin seeds whole : 1 tblsp
Oil : As required (for frying & for the dough)
METHOD:
Soak badam for an hour or microwave it for couple
of mins and remove the skin. Add water & grind it
to smooth paste.

 Now in a bowl, take rice flour, jeera whole, hing & salt.
 Then add a tblsp of hot oil. Slowly add the badam mixture to this
and knead the dough. Add water if required.


 Now choose the design of your choice from murukku press.
I selected the below one in the pic. Assemble the murukku press
and fill it with dough as shown in the pics below.

 Now heat oil in medium flame. Mean while prepare the murukku
and place it on tray with aluminium foil as shown in the pics below.

 Now, once the oil is hot transfer the murukku and fry it. Once
done the murukku will float and will be golden brown in colour.
Transfer it to a tray with tissue paper or kitchen towel. Let it
cool down then only it will be crispy & crunchy.


 Enjoy crispy & crunchy badam murukku with tea or coffee :-)
 NOTES:
* The dough should be soft and firm and not sticky.
If not the murukku will drink more oil & become soggy
* Instead of almonds, cashew can also be used.
* If the dough is too hard add tsp of oil or butter to make
it soft.
* Grind almonds without any lumps. If not, it will get
stuck in the murukku press.
* Oil should be hot & in medium flame throughout
the process.
* For my non-tamil speaking friends, "murukku"
means twisted. This snack is twisted in shape & hence
it is called as "Murukku":-)
