SPINACH MOMOS (MY VERSION OF MOMOS :-))


Hey all ! Here I am with another
interesting, healthy, tasty recipe :-)
This is again an experiment of mine 
& came out real good.. I had extra 
dough from spinach paratha.. So, I thought
I will try momos with that & I am
glad I did that :-) Lets begin :-)
SPINACH MOMOS RECIPE:
Recipe: Indian / Category: Snacks
Prep time: 30 mins / cook time : 15 mins
TO GRIND:
Spinach (boiled) : 2 cups
Salt : as required
Cumin/ jeera powder : 1 tsp
Garam masala powder : 1 tsp
FOR THE DOUGH:
Atta / wheat flour : 1 cup
Salt: as required
Oil/ ghee: 1 tsp 
FOR THE STUFFING:
Onions (chopped) : 1 small
Spinach (Chopped) : 1 cup
Capsicum (Chopped) : 1 small
Carrot (grated) : 1 small
Ginger (grated) : 1 inch
Black pepper  powder : 2 tsp
Salt : As needed
Soy sauce : 1/2 tsp
Tomato Ketchup : 1 tsp
Chilly flakes : 1 tsp
Oil : 1 tblsp
METHOD:
Wash spinach & drain water.
Microwave spinach for 5 mins with pinch of salt.
Drain water keep aside. Let it cool down
Grind the boiled spinach with cumin & garam masala powder.



Now slowly add flour to this mixture.
It will be sticky but it's ok.

Add 1 tsp oil and knead the dough. Keep it closed for 15 mins.

Now for the stuffing, chop spinach / onions / capsicum finely.
Grate carrot & ginger. In a microwave safe bowl, 
mix all the veggies. Then add black pepper, salt 
and sauce mixture with chilly flakes & oil 
as shown in the pic below. Mix well. 



Microwave it for 5 to 7 mins. Pls make
sure the mixture is dry and not watery. 
Now make even round balls. It has to be
 small - like we make for puris. Dust the
ball with some wheat flour and roll it into
 thin disc. It has to very thin as shown  in 
the picture below.




 Now place the stuffing inside the rolled dough &
 shape it as shown in the below pic.


Now place the stuffed momos in a vessel,
 leaving space. Cover the pressure cooker
and cook it till you get one whistle. 
Immediately transfer it from the stove. Let it
cool down for 10 to 15 mins. Slowly open the 
cooker cover. The momos would have become
 bigger in size. Insert a toothpick & check if comes 
out to clear to make sure it it cooked properly.




Enjoy hot momos with your favourite sauce :-)
NOTES:
 I used olive oil. Ghee or butter can be used
* I used garam masala & jeera powder but it is optional
* Pls don't add water to knead the dough 
* The stuffing has to be dry. If not the momos will break.
* Garlic can also be used in the stuffing.
* The stuffing can be cooked in a pan in stove instead of
microwaving.
* The dough has to be rolled thinly if not momos  will be
chewy.
* Pressure cook fr one whistle only & transfer the cooker 
immediately. If not, the momos might over cook.
* Leaving space while arranging is important, as the momos
will become big after steaming
* Instead of pressure cooker, steamer or idly cooker can also
be used. Steam for about  ten to 12 mins.
