paneer at home from scratch. We
can do it with simple ingredients
from our pantry & the best part is
we can use low fat milk for this..

Prep time: 5 hours for setting / cook time: 15 mins
INGREDIENTS:
Milk: 1 litre
Curd : 1/4 cup
METHOD:
Boil milk as per normal & lower the flame.
Add curd to the milk & stir it in low flame.
Once the water get separated, turn off the
flame.
Using a strainer & cloth, strain the mixture.
Now squeeze the cloth gently to remove excess
water.

After 2 hours, place it under a flat surface & keep
something heavy on top of it for 3 hours.
After 3 hours, once the paneer is set cut it into
small cubes using a clean knife. You can see the
paneer disc holding up int he below pic. If the
paneer is not set, it will fall apart.
Alternatively you can refrigerate it & cut it at the
time of using.
Store it in fridge in an airtight container or zip lock bag.
Pls use it within 2 to 3 days.
To use it from fridge, soak it in warm water till it becomes
soft
Enjoy home made paneer :-)
NOTE:
* Lemon juice or vinegar can be used to curdle the milk.
But curd will give more quantity paneer.
* It is important to hang & set the paneer for minimum 5
hours as that will make paneer smooth.
* I used 2% milk. Full cream or skimmed milk can be used.
* Keeping the paneer under a flat surface before keeping
something heavy will help to make even surfaced paneer.
* Pls wrap it in a cloth or towel or plastic cover before setting
it. This will help to make sure no dirt will stick to the paneer.
* I used bread loaf knife. Any clean sharp knife can be used.
* I used my dupatta, a clean towel or muslin cloth can be used.
